2018: Philippe LAURENT, craftsman-entrepreneur, is in front of his oven, as he has been every day: "So much has been done since I arrived in Pau 18 years ago!"; says this former saxophonist from Lille. "It's true that I was able to turn my hobby (pastry) into my profession. The prize I won was the triggering factor and pushed me to dedicate myself to my passion and go into craftsmanship. I began manufacturing cookies and I have never ceased to innovate, inspired by the values and heritage of Béarn territory, in order to create original cookies, such as my famous"Cookies of the killing Death". Today I own two stores: one in Pau near the Castle and another in Idron in my workshop, but I am cramped and my clientele increases. The mayor of the neighboring town has offered me land to build a new manufacturing site in a small commercial area along the roadside. It's very visible, but these are important financial cost. "
Philippe wonders: "I always went through life without asking myself any questions, leaning on my skills, developing the entrepreneurial project I wanted to achieve and using the resources of the territory in which I was living. My accountant fears that I commit to projects that are too important. It is risky for me to change, but I have to take a new course if I want to progress, as I have always done. What is the strategic development that I must achieve to grow, without distorting my expertise and my distinctive skills? Can industrial tourism be an opportunity?"
Objectifs pédagogiques
The case aims to get the student to think about:
- "How the entrepreneur acts", relying on the theory of action developed by Christophe Schmitt from "L'Agir Entrepreneurial". This allows "to consider entrepreneurship in a systemic way through a situation linking three dimensions: the entrepreneur (Me), the entrepreneurial entrepreneur project and the ecosystem of the entrepreneur", (SCMITT Ch, 2005)
- the entrepreneurial process, referring to the Principle of Effectuation (SARASVATHY S, 2001)
- the peculiarities of a local artisanal SME, using the Resources and Skills model (BARNEY, 1991).

The tools used to analyze the problem are:
- the SWOT analysis and, the PESTEL analysis,
- analysis of Porter's (5 + 1) strengths to identify Key Success Factors (CSFs) and Structural Risk Factors (FSRs).
